Easy Black Bean Muffins

Ingredients

  • 1 can of black beans (rinsed and drained)
  • 3 eggs
  • ½ cup unsweetened cocoa powder
  • ½ cup oats (quick or old-fashioned rolled)
  • ½ cup vanilla Greek yogurt (or plain)
  • 1½ tbsp honey (or pure maple syrup)
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ½ cup semi-sweet chocolate chips (or bittersweet. or dark!)


Instructions:

  1. Preheat oven to 350 degrees F. Line a muffin tin with silicone muffin cups (or paper liners).
    1. Measure all ingredients (except for the chocolate chips + additional toppings) in a food processor. Blend until smoothish.
      1. Pour the mixture into the muffin tin, filling each muffin cup almost to the top. Dress with chocolate chips and other toppings of your choice. My favorite add-ons are coconut and walnuts.
        1. Bake for 18-20 minutes, until a toothpick inserted into the center of a muffin comes out clean. Tip: Try not to over bake these, they can turn a little dry (trust me)
          1. Cool 5 minutes or so in the pan and then remove to cool completely.
            1. Enjoy!
            Note: These muffins need to be stored in the refrigerator!
